It seems like at every family function or church event someone had made egg salad. I am from California and I love it there. Recently we went back for a visit and we attended a family get-together and lo and behold the egg salad was present on the buffet. I served myself a little bit , feeling not too confident it was going to be good. It's like the sandwich out of the vending machine in a hospital late at night, not too sure about it. I took my first bite and it was wow, that is delicious. My husband's sister, Jen said "I know the egg salad is really good." It came from a Jewish deli in Santa Monica.
When we returned home to Florida, I was craving that egg salad it was so creamy and white and yummy! I searched the internet for Jewish-style egg salad, and all of them were just like every other egg salad recipe, I figured it must have been how they chopped everything so small, it was just perfection. Cloud and it was also so white, not a bold yellow from the yokes, I still haven't figured out how to get it as white but this recipe is pretty close to that dreamy egg salad.
California Girl Egg Salad
5 large farm fresh eggs in the styrofoam container {a little family humor for my daughter Kassee who has chickens, and brings eggs over to me and I tell her, "I like my eggs to come from the refrigerated section of the grocery store in a styrofoam container."}
1/2 teaspoon of finely chopped onion {if you are meal prepping this is the same onion you chopped for the Lime and avocado Tuna Salad and the Refreshing Quinoa Salad recipes.
2 heaping tablespoons of Mayonnaise
Salt and pepper to taste
shake a little McCormick Rotisserie Chicken Seasoning
Everyone has their way of boiling eggs to perfection, you will find 20 different experts on the internet. This is my non-expert way to boil the perfect way.
Put the egg into the pot fill it with water, and place it on the stovetop on high until it boils. Put the lid on and pull off the heat. put a timer on for 17 minutes. Then crack the bad boys open and slice them and you will see pretty yellow egg yokes.
Remove yokes and cream them up with a fork or a masher, add onion, and seasoning, chop up the whites of the egg, or use an egg slicer and mix together. Viola California Egg Salad
